Throughout this food and cooking learning journey I’m on, I’ve come to appreciate that some of the best meals have just a few ingredients. A dish doesn’t have to be complicated with a lot of flavours. So I thought I’d share with you something super fast, easy and delicious I whipped up last week.
And this is all it took – swiss brown mushrooms, crushed garlic, fresh parsley, good quality olive oil and wholemeal spaghetti. If you like a bit of heat, add some dried chilli. To serve I sprinkled some dried onions on top for a bit of crunch. Yep, it really is that easy!
A simple dish, perfect for those busy nights when you’re strapped for time after work. I’d love to know – what’s your quick and easy weeknight meal?

Mmm yum this looks great! I often struggle with quick easy weeknight dinners. Would love to give this a try! My quick and easy weeknight meals are usually whatever’s left in the fridge! Lately that’s been stir fries, soups and sandwiches hehe!
Oh I struggle too so I’m always chuffed when I find something easy that doesn’t take long to make!
You have been pinned!
Easy peasy, you’ll love it!
That looks gorgeous! I love easy recipes for week nights.
Me too! It’s always exciting to find something quick, easy and delicious
I agree – divinity often comes with simplicity, as long as you start with quality ingredients. Love the look of those Swiss browns too!
I love the idea that less is best – think I’ll try it more often!
So simple, so tasty! Loved it.
And super easy too!
Week night dinners that are quick are normally the best- providing there isnt much mess to clean afterwards!
My quick weeknight dinners are honey, soy chicken wingettes- nice and simple
Oh I’m with you, the less to clean up the better! Something that only takes one pot / dish is a win for me
my fav
