Something I’ve really been getting into lately is a big hearty salad, that is popularly known as a nourish bowl. Or as I like to call them, EVERYTHING bowls. They’re increasingly appearing on cafe and restaurant menus, they taste amazing and they’re really easy to make at home.
The beauty about these are if you have all the ingredients, you can put a bowl together quickly, even on those busy weeknights.
I like to cook rice ahead of time so I can heat a little up when needed. I also make sure I’ve got goodies like greens and a homemade hummus or sauce ready to go.
Here’s how it’s done. Roast up at least one or two of your favourite vegetables like potato, pumpkin, sweet potato, mushrooms, broccoli, cauliflower, brussels sprouts or zucchini.
Now it’s time to get creative and add all the things you love.
Layer your roasted goodies in a bowl with extras like noodles or rice (black rice or brown rice is a healthy option), salad greens or baby spinach, sliced avocado, sauerkraut, chickpeas or hummus, corn, mayo or onion jam, and top it with toasted sesame seeds or nuts for crunch.
You’ll have a big bowl of healthy, loaded with different textures and flavours, that will make you feel like you’ve enjoyed a simple and tasty dose of goodness.
I’ve been making these a lot and I’m enjoying playing around with different flavours and ingredients. It’s the best way to make a salad something you want to want all the time!
