A friend at work gave me a hot tip about her neighbour who makes fabulous chai tea. To find out more, I took a trip to the inner west, where a bright, flowery bicycle was parked on the sidewalk of the main road.
The chai is made by Sarah Barry – otherwise known as Psychic Sarah – a tarot reader with a private office above Suzy Spoon’s Vegetarian Butcher in Newtown.
Sarah, a lover of chai tea, created her own mixture based on an authentic Indian recipe. After much experimenting Sarah also worked out a way to reduce the brewing time.
The chai contains an aromatic blend of cardamom, cinnamon, star anise, ginger, coriander seeds, black pepper, vanilla bean, nutmeg and black tea. As a personal touch, Sarah pounds and blends the spices for each pack herself.
I brewed the chai for my family with soy milk and coconut sugar and we all really enjoyed the earthy, warm and spicy mix. The chai is not only great on its own, it would also be perfect to add in a flavoured almond milk.
