While on my relaxing mini-break, I attempted making almond milk for the first time.
I saw flavoured almond milk being made at a superfood smoothie workshop run by the lovely folk at The Living Lunchbox and was surprised at how easy it was to make.
I love that you can make your own milk, and this version has a good flavour without being too sweet or overpowering.
- 1 cup raw almonds
- 1 pot of chai tea
- 1 tsp cacao
- ½ tsp cinnamon
- ½ tsp vanilla extract
- 2 medjool dates, pitted
- Soak almonds (optional) and rinse.
- Brew tea for 5-10 minutes then allow to cool.
- Add all ingredients to a blender and whiz.
- Strain in a nut milk bag.

What I didn’t consider is that the longer you whiz the ingredients, the finer the contents become and in turn, the more sediment you end up with, even after straining. Next time I’ll be sure that it’s a little chunkier before I strain it to result in a silkier milk.
The milk will last refrigerated for a few days – it’s been the perfect addition to a chia pudding and breakfast smoothies.
