Going to the Mekong Delta was a highlight of my Vietnam tour. I was particularly looking forward to visiting the floating markets on the Mekong River and a homestay.
When we first arrived (by boat of course) we were taken to a lovely home-style restaurant for lunch. I really loved my veg spring rolls made with lattice rice paper that give the rolls a fantastic crunch.
This adorable cucumber display was placed in the middle of the table with the spring rolls. Gorgeous!
After lunch we got back in the boat to take a ride along the Mekong River and see the floating markets. Locals visit the market daily to sell their fresh produce.
Are these the cutest kids ever? We did a lot of waving at each other before I got this happy snap.
In the afternoon we arrived at our homestay and after settling in to our shared rooms with fans and mosquito netted beds, we were all invited to join in and help with dinner.
The best way to learn how to make perfect spring rolls is to learn from a local!
Fresh vegies, noodles and spring rolls – most of the meal is cooked in a simple wok.
