Fact: You can’t beat a chocolate crackle. It’s one of those old school snacks that lightning bolts you back in time to childhood birthday parties, with colourful fairy bread, sugary ice cream cakes and frantic games of musical chairs and pass the parcel.
Chocolate crackles are a crunchy, sweet, chocolate and coconut treat.
I hadn’t made chocolate crackles for years so I whipped some up for an office morning tea. I’d forgotten how little time they take. This time I increased the amount of cocoa and that turned out to be the best decision. I scored lots of comments about the lush chocolatey flavour which makes this version the winner.
This is a handy one to keep up your sleeve for last minute gatherings. A batch is bound to please everyone – they’re fun for kids and nostalgic for adults.
- 4 cups puffed rice
- 1 cup icing sugar, sifted
- 5 Tbs cocoa powder
- 1 cup desiccated coconut
- 250g copha, melted
- Add the dry ingredients to a bowl and mix thoroughly.
- Melt the copha over medium heat and allow to cool slightly.
- Pour in the copha over the dry ingredients and mix well.
- Generously divide the mixture into cupcake patties. Refrigerate until serving.
