I have a friend who is a complete fitness freak. When he’s not working he’s running around the block (even during his lunch break) and he gets up crazy early for boot camp on the beach. Admittedly I think he’s a little insane, but he’s also lots of fun.
Last night he experimented with the idea of making something sweet that doesn’t need added sugar. And so he invented these tasty muffins – that are sugar free and gluten free. Because they have nothing bad in them, we’ve decided to call them ’nuffins’.
Chocolate nuffins
- 100g gluten free maize flour
- 1 cup chocolate protein powder
- 100g cocoa mass
- 2/3 cup water
- 2/3 cup coffee
- 2 eggs
- 3 tablespoons olive oil
- 1/2 teaspoon stevia
- 1/4 cup chia seeds
- 2 to 3 macadamia nuts per muffin
- Sprinkle dark chocolate on top
- Bake at 180 degrees for 20-25mins
So what’s the rating:
These quick and easy nuffins are surprisingly moist! The coffee isn’t overpowering however if you aren’t a coffee person you could easily leave it out. The macadamia nuts also give them a nice crunch. They would also work well with other nuts like walnuts. This makes me happy x 2!
