There is something special about being invited into a friend’s home for a meal. It’s the chance for them to proudly show off their safe place – their comfort den – and bring you a little more deeply into their lives. For me it always feels like an honour so it’s an opportunity I try not to miss.
Whenever I receive such an invite I can hear the echoes of Ma ordering me “Don’t go empty handed!” and it gets me scrambling for something I can make, to show my appreciation and thank the host for having me over.
In an ideal world, there would be loads of time to plan, prepare and make something wonderful but unfortunately we don’t always have the luxury of unlimited time! I had a jam-packed weekend scheduled and as I was on dessert duty for Sunday brunch, I had to think of something quick to make.
After a little brainstorming, I decided on individual tarts with fresh berries and chocolate. And so, on the way home from dinner on Saturday night, I stopped at the supermarket to pick up a few ingredients for my simple dessert and do the prep for breakfast in the morning.
This is one darn simple treat. It looks real pretty, tastes great and is bound to impress your host and fellow guests. Best of all – it only takes a jiffy to assemble.
- 6 small pre-made pastry tart shells
- Chocolate spread
- Fresh raspberries
- Fresh blueberries
- Block of white chocolate
- Take a spoonful of your favourite chocolate spread and generously spread it evenly over the tart base.
- Place some berries on the chocolate and gently push so they stay in place.
- Top with shaved white chocolate and keep refrigerated until serving.
