Ring in the new year with a prize!

Happy New Year and welcome to 2013! I’m super excited about the year ahead, it’s going to be fantastic! To celebrate I have a special treat for you. It’s my first giveaway and I have not one but THREE prizes up for grabs!

Broccolini-1A cross between broccoli and Chinese kale, Broccolini® baby broccoli combines an asparagus-like stem with tiny buds reminiscent of a mini broccoli head. Broccolini® baby broccoli is an entirely edible, no-waste vegie which can eaten from tip to stem. Ultimately versatile, it suits all cuisine styles.

I love the fresh crunch of broccolini. It’s great in stir frys or just as a side dish. My sister gave me a fab vegetarian cookbook for Christmas so I used it as inspiration to make a one-pot vegan broccolini lunch for the family.

Spaghetti Genovese
300g potatoes, peeled and roughly chopped
1 tsp salt
300g spaghetti
1 bunch Broccolini® baby broccoli
120g pesto
Salt and pepper to taste
Extra virgin olive oil for drizzling
3 Tbs chopped fresh parsley

  1. Bring a large pot of water to the boil, add the potatoes and salt. Cook for 5 minutes until softened, then add the spaghetti and cook for a further 5 minutes or until almost tender.
  2. Add the broccolini and cook for a further 2 minutes. Drain off the cooking liquid, reserving 1/4 cup.
  3. Add the pesto and reserved liquid to the pot with the pasta and vegetables. Season well with salt and pepper, drizzle with olive oil and sprinkle over the fresh parsley.

I made the pesto from scratch. It was my first time making pesto – it’s really easy and tastes so much better! Just whiz a bunch of basil, 50g toasted pine nuts, 2 garlic cloves and a good glug of extra virgin olive oil. I like it a little chunky so I pulsed the food processor in short bursts until I got the consistency I wanted.

    Love broccolinli with almost anything but great in an Asian style stir fry noodle dish with tofu, do not forget lots of garlic and ginger. Yum

  5. Not entering or adding a broccolini recipe, but instead adding that you can substitute raw cashews in the pesto for a slightly sweeter version. Also, adding grated Parmesan makes it killer.

    I like the packet Mi goreng noodles fried up with some extra soy sauce, garlic, baby corn and broccolini. Not the most inspired recipe, but certainly quick and tasty!

    Or my daughter loves a dish i throw together with cooked chicken, bacon, cooked pasta, cauli and broccolini in an alfrredo sauce and sprinkled with cheese and then baked in the oven…yummy

    • Well done getting your daughter to eat broccolini, I believe some kids and vegies can be a challenge ;)

      • Oh gosh all three of my daughters used to eat it raw when they were in their highchairs. All of my kids are pretty good with veggies. The youngest wont eat pumpkin though but shes good with everything eklse but prefers her veggies raw

  17. MY PAN-SEARED CHICKEN WITH BROCCOLINI RECIPE

    Ingredients
    • 1 chicken breast ( cut into small strips)
    • 2 cups broccolini
    • 2 cups sliced grape tomatoes
    • 3 cloves garlic
    • Salt & pepper
    • 2.5 tablespoons dried Oregano
    • 2.5 tablespoons Basil
    • Cayenne Pepper
    Method
    1. Cut up the chicken breast into small strips, grape tomatoes in half, and garlic cloves into long pieces. Slice the broccolini to remove any leaves and separate into long spears.
    2. Spray a large frying pan with cooking spray, turn the stove to medium heat.
    3. Place chicken, tomatoes, garlic, and broccolini in the pan.
    4. Add basil, oregano, salt and pepper, and cayenne pepper.
    5. Stir over medium heat and allow it to cook for ~ 10-15 minutes, until the chicken is fully cooked through and the broccolini is a vibrant green. The broccolini and tomatoes should be soft and begin to wilt.
    6. Turn off the heat and allow it to cool. Enjoy.

    My sister in law just shared a recipe with me this morning with raw broccolini, red onion, bacon bits and cranberries salad dressed with a sourcream and mayo cream with lemon juice and curry powder, sounds divine and i can’t wait to try it later :)

    I love it done on the BBQ, a bit of olive oil, salt and pepper and grilled until just cooked through, so tasty as a side dish or just finger food!

    I blanch my broccoli ,then I place it in an oven proof dish .I make a cheese sauce and pour it over the broccoli add some grated cheese place in the oven 180c for about 20-30 mins .It is Beautiful .

  34. Pesto has too strong a taste for my young kids so I make my own substituting basil with broccoli. I’ll now have to try making it with Broccolinni instead.

    Vermacilli noodles, steamed carrot and broccollini (still crunchy) and fresh mint rolled into spring rolls, served with a sweet chilli dipping sauce,YUM!

    Chilli and garlic broccolini, so easy and delicious”)
    Steam or blanch broccolini for 2-3 minutes until just tender. Drain and refresh. Heat oil in a large pan over medium heat. Add garlic and chilli. Cook for 1-2 minutes until garlic just starts to colour. Add broccolini, season well, then toss to warm through.

  60. I love broccolini in my green or red curries with rice. I also like to eat it by itself with carrots, mash potato and lamb chops!

  61. I love to use broccolini as an ingredient when making black bean bean beef stirfry. It tastes delicious with the black bean sauce and the perfect compliment with beef.

    I’ve read a couple of your recent posts and I think I might read a few more. You and I have very similar views on vegetarianism, particularly about not wanting to bag meat eaters.
