Pesto is such a flavoursome condiment and can be used in so many delicious ways. It makes a great dip with crackers, it’s an excellent sandwich spread and it’s fabulous stirred through pasta.
I like playing with different nuts and greens to get different flavour combinations just like this huge jar of kale and almond pesto which I whizzed up with some olive oil, nutritional yeast and salt and pepper. I also enjoy testing out different consistencies – sometimes smooth and sometimes chunky – to find the exact version that I like best.
Tip: Fresh herbs and greens like basil, parsley, mint, chives, spinach, kale and rocket work really well and raw nuts like cashews, pine nuts, almonds, pistachios and walnuts will give your pesto a tasty kick. Lots pesto recipes include Parmesan cheese but I like the flavour of nutritional yeast.
